Indeed, it makes me think of peaches and cream which makes me squeal with delight. Indeed, this old-world flavorful oven-baked pancake will have you raving about it for weeks to come. Needless to say, German pancakes are easy peasy to make and will fill your kitchen with vintage aromas and flavors. Just think of those piping hot personal pancakes with big bites of peaches topped with a little maple syrup and whipped cream. Just thinking about them makes me hungry. How do you take this pancake to the next level? Cooking it on the grill. Hence, a smoker grill will infuse smokey flavor into the peaches and the batter. I highly recommend cherry, pecan, apple, maple, or hickory pellets.
Gluten-Free German Peach Pancakes:
Believe it or not, this recipe for two personal pancakes is made in a 6-inch cast-iron skillet. Generally speaking, most people don’t want to turn on their ovens in the summertime. Hence, cast iron skillets can be made on the BBQ or grill. Thereby adding a smoky flavor to each and every bite. No need to heat up your house.
However, they can also be made in the oven during cooler months reminding you of summer and summer flavors. Why flip pancakes when you could be having a cup of coffee while you wait? Consequently, these pancakes can double as desserts. Or top them with ice cream and now breakfast is dessert.
Subsequently, they are also known by other names; Dutch Puff Pancake, Dutch Baby Pancake, Dutch German Pancake, German Pancake, or German Puff Pancakes. Whatever, you call them in your family they are delicious, quick, and easy to make.
Use your grill for breakfast, lunch, and dinner. In any event, just remember to preheat your grill. I love using my grill during the summertime it reminds me of camping and RV’ing. So many great memories with my kids. Plus there is nothing like the flavor of food on the grill or being outside.

Gluten-Free German Peach Pancakes
Ingredients:
- 2 tbsp coconut oil
- 2 whole peaches cut into slices
- 1 tbsp maple sugar
- 1/2 tsp cinnamon
- 1/4 tsp cardamom
- 3 whole eggs
- 1/3 cup cassava
- 1/3 cup nut milk
- * 2 tbsp rum (optional)
- 1 tsp vanilla powdered monk fruit sweetener
Directions:
First, clean and set the pellet grill to smoke for ten minutes. Second, preheat the grill or oven to 400 F. Thirdly, place the coconut oil into two 6-inch cast-iron skillets. Place the skillets onto the grill or into the oven. Once, the oil is melted remove the skillets and brush the bottom and sides with the oil. Next, place slices of peaches into the bottom of each skillet. Finally, sprinkle half of the maple sugar, cinnamon, and cardamom over each of the peaches in the skillets.
Next, place the skillets into the grill or oven for 5 – 8 minutes to cook the peaches. While the peaches bake, place the eggs, cassava, nut milk, optional rum, and powdered vanilla monkfruit sweetener into a quart canning jar. Screw the lid on and shake for a minute until all the ingredients are combined. Lastly, pour half of the pancake batter into each skillet. Cook for 10 -12 minutes or until a toothpick comes out clean. Do not open the grill or the oven as the temperature will drop.
Chef’s Notes:
For more aesthetically pleasing pancakes flip them over on a plate so that it looks like an upside-down pancake. Once the pancakes are out of the oven they will deflate slightly.
