  • 2 tbsp 2 tbsp butter
  • 1 (½ oz.) 1 (15 g) scallion, finely choppedscallions, finely chopped
  • 2 2 pickled jalapeños slices, finely chopped
  • 1 (4 oz.) 1 (110 g) tomato, finely choppedtomatoes, finely chopped
  • 6 6 large egglarge eggs
  • ½ cup (2 oz.) 120 ml (55 g) Pepper Jack cheese, shredded
  • salt and pepper

Making low carb simple

Instructions

  1. In a large frying pan, melt the butter over medium high heat.

  2. Add scallions, jalapeños and tomatoes, and fry for 3-4 minutes.

  3. Beat the eggs and pour into the pan. Scramble for 2 minutes. Add cheese and seasonings.

Tip

Serve with avocado, crisp lettuce, and dressing to add even more excitement to this zesty meal.

    Mexican scrambled eggs (or any fried mexican) are much tastier with corn oil instead of butter; we do not fry in butter. I once tried it and couldn't' figure out what was wrong with my eggs-- tasted funny, not as good-- it was the butter and also saffron oil (ugh on this one. CORN OIL!!

    These eggs are delicious! The pickled jalapeño gave them just a little heat and a really nice flavor (I don’t usually use pickled jalapeños). I served them with an avocado on the side, as suggested. It was a perfect combo. Kerrygold butter worked perfectly for sautéing the vegetables and cooking the eggs. No need to use any oil.

    Have made this now three times for my husband and he absolutely loves it! I use dripping (beef fat) and also a little bit of butter to cook all the things in. Oh and add a bit of ground cumin to it! Scrummy!!!

    You can cook an egg with olive oil. Eggs can and should be cooked at a very low temperature so it shouldn’t hit a smoking point.

    PLEASE could we have grammes of butter and millilitres or whatever rather than tablespoons the size of varies from country to country. You have them mixed up even in the metric online! Also.this for 3 people asks for 41/2 eggs - ugh? I suppose the answer 4 large - or 5 small ones? We get eggs in five sizes in Britain!!! 😂

    Yes, sometimes when scaling recipes away from the default number of servings, it can end up with some interesting measurement amounts! Since this is just scrambled eggs, using 2 will be no problem.
